“A wandering soul with the desire to explore and learn”: this is how Tano Simonato describes himself when speaking about his life and his great passion for cooking, cultivated since a very young age. Curiosity and the desire to improve soon led him to discover a strong, burning and irrepressible passion. Even from the very beginning, Tano has always been attracted by the idea of experimenting, creating innovations and causing amazement with his preparations. However, in the ’70s, this approach was pure science fiction. He therefore had to wait until the ’90s to finally be able to devote himself to the project he had pursued throughout his life. At this turning point, the encounter with extra virgin olive oil was crucial, a shock that became a necessity: explaining, through his cuisine, how tradition can evolve in promoting the benefits of genuineness and health, yet without sacrificing flavour. In 1995 Tano opened his own restaurant, Tano passami l’olio (“Tano pass me the oil”), in 2008 he was awarded a Michelin star and in 2015 he received the prestigious Best Table in Italy award granted by Paolo Massobrio and Marco Gatti’s Guida Critica Golosa.
